Harvesting

It takes up to two years for snails to be ready for harvesting and sale. Depending on the size you stock your farm with. The brim of the shell tells if its matured or not.

Processing and packaging

Processing snails involves removal of the meat from the shell. To do this;

  • Drop small quantity of alum in hot water, enough to kill the snails. The hotter the water, the softer the resulting meat.
  • Allow the snail to stay in boiling water for about 3-5 secs, and if very hot, then 5-10 secs.
  • Turn the snails, then shake and decant the hot dirty water.
  • Run cold water to cool down he heat from the snail.
  • Shake off the snails easily into a clean bowl of water.
  • Remove the offal, then it’s clean and ready for cooking.

Using this method will prevent the snail from releasing more mucus, even after cleaning it.

Snails can be salted and roasted. They could be iced or frozen to preserve its potency. Snails can also be packaged in cellophane, refrigerated, canned or bagged for local and foreign market.

So, as a farmer, you can decide to sell live snails, cleaned snails, peppered snails, oven dried snails or fried snails. It all depends on you and your market.
